Pizza Casserole

After our Sunday Roast I decided to have more comfort food. Some call it hamburger goulash but I think pizza casserole seems more appropriate as you can use whatever ingredients (think pizza toppings) you have in your fridge. Here's my version (serves 4):

-500g minced beef
-1 onion, chopped
-garlic, mined
-1 bell pepper, chopped
-button mushroom, chopped
-50 pepperoni slices
-cheddar cheese (if you want it extra cheesy)

Toppings
-mozzarella cheese, shredded
-half package of macaroni, cooked
Sauce
-1 can of tin tomatoes
-1 can of tomato sauce
-2 or 3 oxo cubes
-2 or 3 tablespoons tomato paste (if needed)

Seasonings:
-oregano
-mixed herbs
-cayenne pepper
-mustard
-Worcestershire sauce
-salt and pepper
1) Brown onion, garlic, and beef. Drain liquid.

2) Put in all the ingredients under "sauce", bring to boil.

3) Put in the rest of the vegetables, in my case chopped pepper and mushroom. You can put sausage meat or salami or pepperoni chunks in if you want. Bring to boil.

4) Put in all seasonings. Again use whatever you have at home you deem suitable. simmer for 5 to 10 mins.

5) Mix noodles in. The sauce might seem to have too much liquid but don't worry as the macaroni will soak it all up.

6) If you want it extra cheesy, add cheddar cheese and mix it in.

7) Spread mixture in baking tray or casserole dish, top with pepperoni and mozzarella cheese. Bake uncovered (180C) for 30 mins or until cheese is brown.
