The Paul Bocuse Institute is in the ex-expo site. The area seems deserted but some of the buildings are still being used.
The nice and airy dining room.
The open kitchen takes up almost half the dining room. It was interesting to see the busy chef/apprentices running around prepping for various items from stocks to pastries.
We loved the freshly baked baguette.
Can't say I remember what the amuse bouche was. The Chinese waitress-in-training was very friendly and helpful but she was very difficult to understand. She was almost shy to pronounce the dishes.
From the daily special menu (RMB250 for 3 courses) black porgy acras and salad.
